Our Nebbiolo vines will be harvested three times this year. The first harvest was just completed, gathering only from the tips of the bunches, from which we will produce a Nebbiolo spumante. In about ten days we will harvest the Nebbiolo vines a second time, gathering the grapes farthest from the trunk of the vine, producing the Langhe Nebbiolo. The third harvest will take place in around twenty days, and will be the origin of the Nebbiolo da Barolo. The triple harvest is very costly, in that labor must be employed three times for the same vineyard, but it allows production of wines of tremendous qualitative depth. The Nebbiolo spumante project will be explained later in more detail, not least because it will involve a number of companies from Piedmont and our ambitions are considerable.
