The tying

We are at the end of winter, a strong “föhn” blows from the Alps and makes it harder to work outside. We are now finishing tying the grapevines: this practice consists basically in delicately knitting the spring which gives birth to the fruits, tying them on a horizonatal position. With this practice, we keep the grapevine vegetation and possible fruits low, stimulating the production. This job has to be conducted rigorously by hand, and it’s required that the operator is particularly careful not to cut off the shoots in the process.
