The Nebbiolo tips are starting off the 2012 grape harvest; and so our ambitious project to produce a Nebbiolo sparkling wine following the classic method continues. The hot August weather pushed us to start in this novel way, harvesting the lower part of the Nebbiolo bunches, preserving the acidity that will be fundamental to the vinification of the sparkling wine base.
As you can see in the photos, we are harvesting parts of the grape bunches that are not very ripe and 20-25% of the bunch measuring it with the length of our thumbs.
