My grandfather taught my father, my father taught me and it is something I recommend trying for yourself: after preparing a soft-boiled egg and eating the yolk, I fill the egg with Barolo, or as in this case, Barbera Loirano Soprano, and then I drink it. The blend of egg white and wine is wonderful! Try it for yourself, and you will understand the affinity between red wine and egg white, the latter having been used for centuries in wine-making as a fining agent.
